Carrot cake is a low-fat moist cake and the touch of cinnamon powder and the addition of carrots into a plain butter cake completely transforms its taste into an exciting and new flavor.


Preheat Time:  10-15 minutes
Baking Time:  60 minutes
Baking Temperature:  gas 4/180c/fan160c


  1. Self-raising flour: 300g 
  2. Oil:  250ml
  3. Eggs:  4
  4. Brown sugar: 200g
  5. Baking powder:  1/2 teaspoon
  6. carrots (grated):  250g
  7. Walnuts (coarsely crushed):  150g
  8. Raisins:  150g
  9. Cinnamon powder:  1 teaspoon
  10. Orange or Vanilla essence:  1 teaspoon


  1. Line the pan with parchment paper and grease it.
  2. Preheat the oven to gas mark 4/180c/fan160c.
  3. Mix with beater oil, eggs, and sugar.
  4. Sift together self-raising flour, cinnamon powder and baking powder into a bowl.
  5. Add flour with spatula into egg mixture.
  6. Lightly mix walnuts, grated carrots and raisins into butter mixture.
  7. Pour the mixture into prepared tin and bake for 60 minutes or until a skewer inserted into the middle comes out clean.
  8. Remove the cake from oven and set aside to cool for 10-15 minutes.
  9. Remove the cake from tin and carefully remove the parchment paper and set aside on cooling rack for another 10 minutes.

Baking time: 50-60 minutes
Temperature: 180c/160fan/gas mark 4
Preheat oven time:  10 minutes at 180c


  1. Plain Flour:  300g or 16 tablespoon
  2. Castor sugar:  300g or 16  tablespoon
  3. Unsalted butter:  200g
  4. Eggs:  4
  5. Bicarbonate of soda:  1+1/2 teaspoon
  6. Baking powder:  1+1/2 teaspoon
  7. Banana Essence:  1 teaspoon
  8. Bananas (ripe):  4 large or 6 small
  9. Yoghurt:  3/4 cup


1.  Greased and dust the pan with flour or line with parchment paper.

2.  Seive flour, baking powder & baking soda together and keep aside.

3.  Softened the butter if it is hard. Butter and eggs should be at room temperature before making cake.
4.  Put Castor sugar in bowl and add butter, whip with beater at high speed until light and fluffy.

5.  Peel and mash the bananas.
6.  Add into butter mixture. 
7.  Add yoghurt and banana essence.

8.  Now add one egg with one tablespoon of flour and fold all remaining flour.
9.  Pour all this mixture in a greased and lined with parchment paper cake pan.
10.  Bake at 180c for 50-60 minutes.

Butter Cake


Baking Time:  35-40 minutes
Temperature:  180 degree centigrade
Preheat Time:  10-15 min


  1. Butter 150g/6 ounce/12 tablespoon 
  2. Plain flour:  12 tablespoon
  3. Castor Sugar(Powder):  12 tablespoon
  4. Eggs:  3
  5. Baking Powder:  1+1/2 teaspoon
  6. Vanilla Essence:  Few drops
  7. Dried Fruits (Raisins):  3 tablespoon
  8. Milk:  1/2 cup


  1. Lined pan with butter paper or any brown sheet then grease it.
  2. Mix butter and sugar until it form creamy and light mixture, use electric beater maximum speed.
  3. Sieve flour and baking powder. Mix dried fruits with little flour, keep aside.
  4. Add milk.
  5. Add one egg in butter mixture and 1 tbs flour mixture, then all eggs add like this with flour with slow beater speed. Add all remaing flour in butter mixture.
  6. Add Vanilla essence.
  7. Fold dried fruit with spoon.
  8. Add all batter in greased pan. Put pan in preheated oven.
