NAAN KHATAI




Naan Khatai (Plain Flour) 

Ingredients:

  1. Flour:  6 ounce/12 tbs
  2. Baking powder:  1 tsp leveled
  3. Baking soda:  1/4 tsp
  4. Castor sugar:  75 g/6 tbs
  5. Ghee (melted then freeze)/Butter:  75 g/3 tbs/3 ounce
  6. Cardamom powder/Elaichi powder:  1/2 tsp.
  7. Egg yolk: 1
  8. Pistachio:  10-12

Method:

  1. Sieve flour+baking powder+baking soda.
  2. Beat butter/ghee+sugar+cardamom powder ===Creamy whitish mixture
  3. Mix flour spoon-by-spoon into butter mixture and rub with hand until it becomes soft dough, not necessary to use the whole flour.
  4. Make small balls then make thumb impression.
  5. Egg yolk wash with brush.
  6. Bake at 180 centigrade for 15-20 minutes, not more than that otherwise all moisture will finish.
  7. Put all biscuits on wire rack.

Naan Khatai (Gram flour/besan)

Ingredients:

  1. Flour:  1 cup/4 ounce
  2. Gram Flour/Besan:  1 cup/4 ounce
  3. Baking powder:  1 tsp levelled
  4. Baking soda:  1/4 tsp
  5. Castor sugar:  4 ounce/100g/8 tbs 
  6. Ghee (melted then freeze)/Butter:  100g/4 ounce
  7. Cardamom powder/Elaichi powder:  1/2 tsp.
  8. Pistachio for garnish.
  9. Egg yolk:  1
  
Method:
  1. Sieve flour+baking powder+baking soda.
  2. Beat butter/ghee+sugar+cardamom powder ===Creamy whitish mixture
  3. Mix flour + gram flour spoon-by-spoon into butter mixture and rub with hand until it becomes soft dough, not necessary to use the whole flour.

Ingredients:

  1. Flour:  200g
  2. Semolina/Sooji:  200g
  3. Baking soda:  1/2 tsp
  4. Castor sugar:  200g 
  5. Ghee (melted then freeze)/Butter:  200g
  6. Yoghurt:  1 tbs
  7. Cardamom powder/Elaichi powder:  1 tsp
  8. Nutmeg (Jaefal) + Mace(Javitri) powder:  1/2 tsp
  9. Pistachio for garnish.
  10. Egg yolk for wash:  1
  

Method:

  1. Sieve flour+baking soda.
  2. Beat butter/ghee+sugar+yoghurt+cardamom powder+Nutmeg(Jaefal) + Mace(Javitri) powder ===Creamy whitish mixture
  3. Mix flour + Semolina(Sooji) spoon-by-spoon into butter mixture and rub with hand until it becomes soft dough, not necessary to use the whole flour.
  4. Make small balls, then thumb impression, stick pistachio.
  5. Egg yolk wash with brush.
  6. Bake at 180 centigrade for 15-20 minutes, not more than that otherwise all moisture will finish.
