Naan Khatai (Plain Flour)
Ingredients:
- Flour: 6 ounce/12 tbs
- Baking powder: 1 tsp leveled
- Baking soda: 1/4 tsp
- Castor sugar: 75 g/6 tbs
- Ghee (melted then freeze)/Butter: 75 g/3 tbs/3 ounce
- Cardamom powder/Elaichi powder: 1/2 tsp.
- Egg yolk: 1
- Pistachio: 10-12
Method:
- Sieve flour+baking powder+baking soda.
- Beat butter/ghee+sugar+cardamom powder ===Creamy whitish mixture
- Mix flour spoon-by-spoon into butter mixture and rub with hand until it becomes soft dough, not necessary to use the whole flour.
- Make small balls then make thumb impression.
- Egg yolk wash with brush.
- Bake at 180 centigrade for 15-20 minutes, not more than that otherwise all moisture will finish.
- Put all biscuits on wire rack.
Naan Khatai (Gram flour/besan)
Ingredients:
- Flour: 1 cup/4 ounce
- Gram Flour/Besan: 1 cup/4 ounce
- Baking powder: 1 tsp levelled
- Baking soda: 1/4 tsp
- Castor sugar: 4 ounce/100g/8 tbs
- Ghee (melted then freeze)/Butter: 100g/4 ounce
- Cardamom powder/Elaichi powder: 1/2 tsp.
- Pistachio for garnish.
- Egg yolk: 1
Method:
- Sieve flour+baking powder+baking soda.
- Beat butter/ghee+sugar+cardamom powder ===Creamy whitish mixture
- Mix flour + gram flour spoon-by-spoon into butter mixture and rub with hand until it becomes soft dough, not necessary to use the whole flour.

- Egg yolk wash with brush.

- Semolina/Sooji: 200g
- Baking soda: 1/2 tsp
- Castor sugar: 200g
- Ghee (melted then freeze)/Butter: 200g
- Yoghurt: 1 tbs
- Cardamom powder/Elaichi powder: 1 tsp
- Nutmeg (Jaefal) + Mace(Javitri) powder: 1/2 tsp
- Pistachio for garnish.
- Egg yolk for wash: 1
Method:
- Sieve flour+baking soda.
- Beat butter/ghee+sugar+yoghurt+cardamom powder+Nutmeg(Jaefal) + Mace(Javitri) powder ===Creamy whitish mixture
- Mix flour + Semolina(Sooji) spoon-by-spoon into butter mixture and rub with hand until it becomes soft dough, not necessary to use the whole flour.
- Make small balls, then thumb impression, stick pistachio.
- Egg yolk wash with brush.
- Bake at 180 centigrade for 15-20 minutes, not more than that otherwise all moisture will finish.
