SHEERMAL

Sheermal is a sweetened bread serve with korma or nihari mostly includes in wedding or any special occasion menu in Pakistani cuisine.

Preheat the oven:  5-8 minutes
Baking temperature:  200 degree Celsius
Baking time:  10-15 minutes 

INGREDIENTS:

  1. Plain flour:  2 cups
  2. Khoya:  1/2 cup
  3. Instant yeast:  2 teaspoon
  4. Salt:  1/2 teaspoon
  5. Kewra water:  1/2 teaspoon
  6. Castor sugar (powder):  1 tablespoon.
  7. Ghee:  3 tablespoon heaped
  8. Cream:  2 tablespoon.
  9. Egg:  1
  10. Lukewarm milk for kneading.
For sprinkle and brushing:  Sesame seeds and milk for brushing.

DIRECTIONS:

  1. Mix all ingredients except milk, add milk slowly, and make a soft dough with lukewarm milk.
  2. Knead the dough very well and keep in a greased air-tight container for rise till it doubles.
  3. When double in size, punched down the dough and divide into 3-4 balls.
  4. Spread with the hands and stretch it and make a round or oval shape sheermal.
  5. Put it on the foiled and greased oven tray.
  6. Prick the center with fork, not the sides.
  7. Leave it covered for second proofing for 30 minutes.
  8. Brush the top with milk and sprinkle sesame seeds or granulated sugar (if you like sweet sheermal)
  9. Bake in preheat oven for 10-15 minutes.
  10. Take it out immediately and then brush with milk.
  11. Keep these warm, wrapped in a cloth or foil.
